Stage 4: The face-off

The finalists, head to head

By now you have two or three recipes that all look good. The face-off decides between them fairly, and makes sure the winner is not a lucky one-off.

Every finalist burns on a single plate, side by side, each one twice.

Why re-burn them together

Your finalists came from different cards, maybe burned on different days, in different spots on the bed, with the focus tweaked in between. That makes comparing their old squares unfair, because the conditions were not the same.

The face-off wipes that out. Every recipe runs on the same plate, the same day, under the same conditions, in one job. Now the only thing different between the squares is the recipe itself, which is the only thing you wanted to compare in the first place.

Why every recipe burns twice

One square can lie. A fleck of dust, a thumbprint of oil, a patch of grain that ran different. If you crown a winner off a single square, you might be crowning an accident.

So each recipe burns twice, as a pair. The first thing you check is not which is best, it is whether the two copies of each recipe match. If a recipe cannot make the same square twice in a row, it is not reliable, and it loses no matter how good one of its squares looked. That is the integrity check, and it is free because the pairs are right there.

How you read it

First, scan the pairs and confirm the twins match. Then pick the recipe that wins for your goal, the darkest, the whitest, the cleanest, whatever you came for. If two tie on looks, the faster one wins the tiebreak.

Proven, not promising

This is the difference between the face-off and everything before it. Up to now you have been narrowing down likely candidates. After this stage, the winning setting is not a hopeful guess that looked good once. It looked good twice, next to its rivals, under fair conditions. It is confirmed.
